My favorite Mexican Restaurant in Norman, OK servers these as an appetizer. Over the years, I’ve tried to cajole the recipe out of the staff to no avail. This is my version.

Ingredients

  • 1 onion
  • 3 jalapeƱo peppers
  • 2T oil
  • 3/4 teaspoon salt
  • 3/4 teaspoon cumin

Directions

Cut the onion into strips and the jalapenos into matchsticks. Heat a cast iron skillet on medium high heat until hot. Add the oil, quickly followed by the onions and turn the heat up as high as it will go. After about 1 minute, add the peppers. Stir the onions and peppers around once and wait another minute. Turn the heat down to medium and stir once occasionally until the peppers become tender. Turn off the heat and add the salt and cumin.
