This is a great alternative to burgers on the grill.

Ingredients

  • 12 Italian sausages (sweet or mild)
  • 2 large onions
  • 2 red bell peppers
  • 1 Jalapeño pepper
  • 12 Hoagie rolls
  • 3 T white vinegar
  • 2 T sugar
  • 1 T vegetable oil
  • 1 T tomato paste
  • 1 t garlic powder
  • 1/2 t salt
  • 1/2 t pepper

Directions

  • Slice the Peppers into match sticks about 1/4“ wide
  • Slice the Onions into thin strips
  • Pre-heat your grill on high or light the charcoal
  • Combine vinegar, sugar, tomato paste, garlic powder, salt, pepper & mix.
  • Add the onions and peppers & toss well.
  • Heat the oil in a foil pan on a cook top set to medium-high and add the pepper & onion mixture.
  • Cook the mixture 6 to 8 minutes until the onions begin to soften.
  • Meanwhile, configure the grill to have a hot & cool side:
    • For a gas grill, turn off the half the burners on one side.
    • For charcoal grill dump the coals out under one side.
  • Put the pepper & onion mixture on the hot side of the grill for 8 to 10 minutes until the onions start to brown.
  • Add the sausages to the cool side of the grill with one end pointing to the hot side.
  • Cook the sausages for 6 to 8 minutes until the casings start to brown.
  • Flip the sausages and stir the pepper & onion mixture.
  • Cook for another 6 to 8 minutes
  • Keep an eye on the peppers & onions and remove it before it begins to burn.
  • Move the sausages to the hot side of the grill and cook for another 2 or 3 minutes
  • When golden brown and an internal temperature of 160 degrees remove from the grill.
  • Serve on hoagie rolls
