When your mouth is on fire and you can't stop eating
Grilled Sausages, Peppers & Onions
This is a great alternative to burgers on the grill.
Ingredients
- 12 Italian sausages (sweet or mild)
- 2 large onions
- 2 red bell peppers
- 1 Jalapeño pepper
- 12 Hoagie rolls
- 3 T white vinegar
- 2 T sugar
- 1 T vegetable oil
- 1 T tomato paste
- 1 t garlic powder
- 1/2 t salt
- 1/2 t pepper
Directions
- Slice the Peppers into match sticks about 1/4“ wide
- Slice the Onions into thin strips
- Pre-heat your grill on high or light the charcoal
- Combine vinegar, sugar, tomato paste, garlic powder, salt, pepper & mix.
- Add the onions and peppers & toss well.
- Heat the oil in a foil pan on a cook top set to medium-high and add the pepper & onion mixture.
- Cook the mixture 6 to 8 minutes until the onions begin to soften.
- Meanwhile, configure the grill to have a hot & cool side:
- For a gas grill, turn off the half the burners on one side.
- For charcoal grill dump the coals out under one side.
- Put the pepper & onion mixture on the hot side of the grill for 8 to 10 minutes until the onions start to brown.
- Add the sausages to the cool side of the grill with one end pointing to the hot side.
- Cook the sausages for 6 to 8 minutes until the casings start to brown.
- Flip the sausages and stir the pepper & onion mixture.
- Cook for another 6 to 8 minutes
- Keep an eye on the peppers & onions and remove it before it begins to burn.
- Move the sausages to the hot side of the grill and cook for another 2 or 3 minutes
- When golden brown and an internal temperature of 160 degrees remove from the grill.
- Serve on hoagie rolls
