Chicken Masala
Chicken and Tomato flavoured with Garam Masala
Ingredients
1 tablespoon oil
1 inch cinnamon stick
3/4 teaspoon cumin seeds
1/4 teaspoon cardamom seeds
1/4 teaspoon peppercorns
1 finely chopped onion (6 to 8 oz)
1 tablespoon minced garlic (6 or 7 cloves)
1 tablespoon minced ginger (about 1 inch)
1 15 oz can of diced tomatoes
2 bay leaves
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 teaspoon garam masala
1 lb boneless, skinless chicken breasts or thighs
Directions
Heat the oil in a large pan over medium-high heat until it shimmers.
Add the cumin seeds, cinnamon stick, cardamom seeds & pepper corns. Stir a couple of minutes until the cinnamon stick opens up.)
Add the onions, ginger & garlic. Stir until the onion starts to brown. Add the tomato, bay leaves, salt and garam masala. Bring to a boil and simmer for 20 minutes.
Add the chicken and simmer for 5 to 10 minutes until the chicken is cooked.
