Bean-thread noodles with Cabbage
Great Chinese side dish
Ingredients
10 to 12 oz bean-thread vermicelli
16oz firm tofu
1/4 cup peanut oil
1/8 cup sesame oil
2T minced garlic
2T minced ginger
1 onion, finely chopped
2 ribs of celery, finely chopped
2 medium carrots, finely chopped
2 eggs, lightly beaten
1 cabbage
1/4 cup nam pla (fish sauce)
1/4 cup soy sauce
Directions
Soak the vermicelli in warm water for 15 minutes & cut to 2 to 3 inches. cut the bean curd into 1/2 inch cubes.
Heat the oil in a wok or skillet over high heat. Stir-fry the tofu with the garlic and ginger until the tofu is brown and crisp at the edges. Add the onion, carrot and celery at little at a time and stir-fry until they are crisp tender. Remove all. Scramble the egg and chop into small pieces with the spatula. Remove and add to tofu/veg mixture.
Add the cabbage and stir-fry until warm. Add the noodles and the other cooked ingredients. Stir-fry on high heat until the cabbage is tender and all ingredients are well blended. Add the fish sauce & soy sauce.
Serves 6 to 8 as a side dish
