Simple Mayonnaise

Ingredients

Single recipe:
2 eggs
1/8 cup (2T) Apple cider vinegar
1 Tablespoon sugar
1 teaspoon salt
1 teaspoon dry mustard
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper (optional)
1 3/4 cup canola oil

Double recipe:
4 eggs
1/4 cup Apple cider vinegar
1/8 cupĀ  sugar
2 teaspoon salt
2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
3 1/2 cup canola oil

Directions

Add eggs, vinegar, sugar, salt, mustard & garlic to blender
or food processor. Turn processor on and add oil in a steady
stream until incorporated. Add the optional cayenne pepper
half way through adding the oil. Refrigerate up to 3 weeks.

Use extremely fresh eggs. Handle them like raw chicken.
