Chicken Fajitas
Restaurant style fajitas
Ingredients
1 cup lime juice (4 or 5 limes)
1 cup dark beer
1 T salt
1 T ground black pepper
1 T ground cumin
1 T paprika
1 T chili powder
1 T garlic powder
1 T onion powder
1/2 t cayenne pepper
8 chicken breasts
2 onions cut in strips
2 green peppers cut in strips
1 jalapeño pepper minced
2 T vegetable oil
The Fixin’s
Flower or corn tortillas
Freshly chopped onions and tomato
Sour cream
Shredded lettuce
Salsa
Directions
Combine the lime juice, beer and all the spices into a 1 gallon ziplock bag. Close the bag and until mixed.
Cut the chicken breasts in half so they are half as thick. This gives you more surface area for the spices and allows them to cook faster. Cook them on a charcoal grill as you would burgers to between 165 and 170 degrees.
Heat the vegetable oil in a skillet until it starts to smoke. Add the onions and fry until soft. Add the green and jalapeño peppers and cook until the onions are starting to caramelize.
Cut the chicken into strips across the grain and serve with the onion/pepper mixture along with the fixin’s.
